Ale (as her friends call her) grew up in a family of Mexican and Lebanese cooks, growing up between spices and amazing aromas. When she had to choose a profession, culinary arts appeared as a natural choice.​A professional chef, natural host, bon vivant and totally bohemian, she decided to share family stories, songs and recipes at the cooking school.

Claudia’s expertise is not only limited to teaching about food but she is an insider of the best food corners and she will be more than happy to share with you the best eateries in Yucatan while you are in a culinary trio with us.

Chef Rosalía Chay has been passed down traditional Mayan customs and techniques from generations past. Chef Rosalía has been featured in Chef’s Table: BBQ on Netflix for her authentic and inspiring Maya cuisine.

Cooking the very best of Mayan food in her hometown Yaxunah in Yucatan, she invites us on an extraordinary journey immersed in her village, where she will show us her techniques and invite us to indulge our palates with exquisite Cochinita and Relleno Negro as we sit at the table amongst her family.

This has got to be one of the best experiences of my life!! Our host Alejandra was incredible and so full of knowledge and skill!! The recipes and tips (including the knife skills) will last a lifetime and I will pass along to my family. Then there is the food!!! What an absolute feast and delicious meal!! We will be back for sure!!

We stepped away from the resort life and jumped right into the local authentic kitchen. Chef Alejandra was a pleasure to learn from and answered our questions to make us understand how the flavors mesh, compliment and balance properly. Having lunch at the end of the course that we prepared with her guidance was one of the best meals I’ve ever had. Will return next time we are here.

We were here for a bachelorette party and had a really good time cooking together. It was wonderful to learn about the country, the heritage, and the ease of cooking really good food. Highly recommend enjoying the jungle with some new friends and refining cooking techniques.

We had the pleasure of experiencing the BBQ Cochinita Pibil Experience in Yaxuna, Yucatan. The experience was unique. The presentation was well-organized, fun and informative. The food was excellent. We enjoyed the Friday menu on our recent vacation. It was a great food and cultural experience. The small groups, great teaching, and recipes we can't wait to try and recreate made it worth it. The food was fun and delicious. The setting is beautiful and fun. If we have chance we will definitely return in the future to try some more menu items.

The food is so good! To get to experience the knowledge of traditional cooking Rosalia holds is a priceless experience, she makes you feel at home, the food is to die for and a well rounded experience all together. It is a bit far from Tulum but if you go to Chichen-Itza its already close to you and if Chichen-Itza is closed it is still worth it! There is also a Cenote a few blocks from Rosalia's house you can visit in the morning.

Fun taco night Guide Diego was very knowledgeable and friendly, it was super fun trip! Weather was quite extreme though, but driver George(? Not sure about his name) was really good at driving on the flooded road. Recommend to future tourists that don't drink too much drinks. You gonna get super full at the end of this trip!

Off the beaten path taco and beer tour This tour was one of the highlights of our Cancun trip. It was my adult son and I and we had a blast. It was great to get out of the tourist area and experience downtown Cancun. Our tour guide Gib was extremely knowledgeable not just about the tacos but also the city.
